Ingredients

  • 8oz Brussels sprouts, halved and trimmed
  • 12oz macaroni pasta, dry
  • 13oz aged sharp farmhouse cheddar, grated
  • 3 cups skim or non-dairy milk
  • 1 tbsp white truffle oil
  • Salt and pepper to taste

Procedure

1. Bring to boil a large pot of water over medium-high heat.

2. Add salt and dry pasta, and cook pasta according to packaging directions.

3. During the last 2 minutes of the pasta cooking, add the Brussel sprouts to the pot to boil along with the pasta.

4. In a large, separate saucepan, had milk and heat over medium until very hot but not boiling.

5. Add cheese and turn heat to low, stirring often to melt and thicken.

6. Add truffle oil and stir again.

7. Season to taste with salt and pepper and stir again.

8. Drain pasta and sprouts, then return to the cooking pot.

9. Pour over cheese sauce and stir to combine thoroughly.

10. Serve.
